I bet you wish your oven had one of these

Ask for a CROISSANT TEST from your oven supplier

This device is what every other combi-oven manufacturer would love to have.

It is the patented Lambda sensor and it is unique to Electrolux Air-o-Steam Level A ovens.

The reason every one wants it is because it measures the “actual” humidity in the oven to ensure you get a quality output regardless of the product type and volume you cook.

Because no other brand oven has a Lambda sensor, they are controlling the oven climate inaccurately. They are guessing the oven climate because they have no accurate measure of humidity.

Forget the buzz-words and marketing hype. Ask them:

“Show me the device in the oven that measures humidity”

A great example to test out the importance of the Lambda sensor is cooking a full load of delicate but moisture rich pastries (like croissants) in a combi oven.  

The pastry releases moisture as it cooks, therefore the humidity in the oven rises and and will need to be controlled. Too moist – the croissants will be soggy and limp; too dry and the croissants become dry and flaky.

In any oven, other than Electrolux AOS, you will get a different result on each shelf, with the variance even greater when you fill it.

Ask your oven supplier to do the croissant test and see what happens.

What’s more is we know whether you are steaming vegetables, baking fish or roasting meats, the steam level in the oven has to be controlled to ensure quality and consistency of your food.
